Chex Mix Variation

Fast, and everyone loves it!

Ingredients
2 sticks butter
2 cups brown sugar
1/2 cup light karo syrup
1 15 oz pkg Kryspix cereal
1 jar dry roasted peanust (May substitute w/ honey roasted)
1 bag small sized pretzels
1 16 oz bag plain m&m's (optional)

Directions

Heat oven to 350

Spray 2 9" x 13" cake pans with Pam

In a BIG bowl, mix peanuts, pretzels and cereal

Boil 2 sticks butter, brown sugar and Karo syrup until butter is melted, then boil for 2 minutes stirring occasionally

Pour mix over cereal as someone gently stirs

Bake for 20 minutes in the cake pans. Turn over and stir twice while baking

Place on wax paper to cool and break apart as it cools

Add m&m's and break apart again

Mom's Lasagna

This recipe is going to take some time but it is worth it!

Meat filling:
1 lb. Italian sausage, bulk pork sausage or ground beef (I usually use ground beef but have used a combination of ground beef and Italian sausage).
1 clove garlic, minced
1 T. parsley flakes
1 T. basil
1 1/2 t. salt (I reduce or omit this).
1 1lb. can (2 cups) tomatoes
1 12 oz. can (1 1/2 cups) tomato paste

Cottage cheese filling:
3 cups cream style cottage cheese
2 beaten eggs
2 t. salt (I reduce or omit this)
1/2 t. pepper
2 T. parsley flakes
1/2 cup grated Parmesan cheese

10 oz. lasagna noodles

l pound Mozzarella cheese grated

Slices of Mozzarella cheese for garnish if desired

1. Begin by browning the meat slowly, drain off excess fat, (may even rinse in warm water to remove fat after browning). Add next six ingredients. Simmer uncovered 30 minutes to blend flavors, stirring occasionally.

2. Cook noodles in boiling salted water. till tender; drain; rinse in cold water. Combine the ingredients for cottage cheese filling. I put them all in the blender and then process until it is smooth.

3. Spray a 13x9x2 inch baking dish. Place half of the noodles in the bottom; spread half of the cottage cheese mixture on the noodles; add half of the Mozzarella cheese and layer on half of the meat sauce. Repeat the layers.

4. This can be frozen or made ahead and kept in the refrigerator over night.

5. Bake at 375 for 30 minutes or until hot in the middle. Garnish with triangles of Mozzarella cheese if you like. Let stand for 10 to 15 minutes so the filling will set. Then cut into squares. Makes 12 servings.

Butterscotch Brownies

This is quick and easy and a nice home-made item for dessert.

1/4 cup margarin or salad oil (canola is a healthy one)
1 cup packed brown sugar
1 egg
1 t. vanilla
3/4 cup all purpose or whole wheat flour
1 t. baking powder
1/2 teaspoon salt
1/2 cup nuts, chopped (I like to use pecans)

Heat oven to 350. Mix oil, brown sugar, egg and vanilla. Stir in remaining ingredients. Spread in a greased square pan, 8x8x2 inches. Bake 25 minutes. Cut into about 2 inch squares to make 16 bars.

Pat's Oatmeal Muffins

These healthy muffins have been served at the Reinhardt house for 35 years.

1 cup rolled oats
1 cup sour milk or buttermilk (make milk sour by removing 1 T. milk from the cup of milk and adding 1 T. vinegar or lemon juice, let stand for 5 minutes)
1 egg well beaten
1/3 cup brown sugar
1/3 cup salad oil
1 cup flour
1/2 t. salt
1/2 t soda
1 t. baking powder
Raisins or currents and/or nuts

1. Heat oven to 400.

2. Place cupcake papers in the muffin pans. Spray the papers with Pam.

3. Combine oatmeal and milk. Add beaten egg. Mix well. Add sugar and oil.

4. In separate bowl sift dry ingredients together and add to the oatmeal mixture.

5. Add raisins or nuts at this time. Stir only enough to dampen the ingredients.

6. Spoon mixture into muffin cups, filling them about 2/3 full and bake.

7. Bake for 20 minutes.

8. Makes 12 medium sized muffins.

Easy Crab Cream Cheese Appetizer

This one has been around for years; can also be done with tiny frozen (thawed) shrimp instead of the crab meat.

Canned crab meat or tiny frozen shrimp
8 oz. rectangle of Philadelphia cream cheese
Shrimp cocktail sauce
Crackers

1. Place one 8 oz. rectangle of Philadelphia cream cheese on a pretty plate.

2. Spread canned crab meat over the cheese.

3. Cover with shrimp sauce.

4. Serve with crackers.

Sour Cream and Noodle Bake

This economical and easy recipe can be used for company, for a potluck or for that neighbor who needs a casserole.

One 8 oz. bag medium egg noodles

Meat mixture:
2 T. butter or margarin (optional)
1 lb. ground chuck
1 8 oz. can tomato sauce
1 t. salt
1/8 t. pepper

Cottage cheese mixture:
1 cup cottage cheese
1 cup sour cream
1/2 cup green onions

3/4 cup grated Cheddar cheese

1. Cook noodles according to package directions, then rinse and drain.

2. Melt butter in skillet or spray with Pam. Add, stir and cook ground beef until it loses its pink color.

3. Add tomato sauce, salt and pepper and cover and simmer for 5 minutes.

4. Mix cottage cheese, sour cream and green onions. Fold together the noodles and the cottage cheese mixture.

5. In a greased 2 1/2 quart casserole or baking dish spread half the noodle mixture. Cover with half the meat mixture. Repeat layers again. Sprinkle with cheddar cheese.

6. Refrigerate or freeze. When ready to serve, bake thawed casserole at 350 for 40 minutes or until it is heated through and the cheese is melted.

Astronaut Sandwiches

This invention was a way to offer healthy and economical food when the kids were growing up, I dreamed up the name thinking they would eat anything that had to do with astronauts. I was right!

2 cans tuna, drained well
About 1/4 cup (or more) mayonnaise or reduced calorie Miracle whip
About 4 T. catsup
Chopped onion
Chopped celery
Pickle relish
Cubes of cheese
You could add chopped green pepper or chopped olives but the original didn't include them.

1. Mix all together to the consistency of a tuna salad.

2. Place the mix in hamburger buns and stack them in a glass casserole. Bake at 350 for about 25 minutes.

Greens Restaurant Chocolate Crunch Cake

This moist, delicious cake is made without eggs or milk. It is so chocolaty and healthy and is eaten up quickly. My friend was able to get this recipe from the restaurant but they said not to give it to anyone else so we won't.

3 cups whole wheat pastry flour
1 cup cocoa
2 t. baking soda
1t. salt

1 1/2 cup maple syrup
2/3 cup corn oil
2 T. vanilla
2 cups liquid (1/2 cup soy milk and 1/2 cup water)

Topping
2 cups slivered almonds
1 cup coconut (the unsweetened kind you get at the health store)
3/4 cup maple syrup

Cake
1. Mix dry ingredients in a bowl. Mix wet ingredients in a bowl. Mix these together and pour into a 9x13x2 inch pan

2. Bake at 350 for 30-40 minutes. Do not overbake or cake will get dry.

3. Cool cake and apply topping.

Topping
Heat maple syrup to about 175 to 200 on a candy thermometer. Add nuts and coconut and spread on the cake.

Broil the topping until golden. Watch this closely as it may brown quickly.

Porcupine Meat Balls

I started cooking this in 1961 and we have always liked it.

Meatball mix:

1 1/2 lb. ground beef
1/2 cup rice
1 t. salt
1/2 t. pepper
1 T. onion minced

Sauce:
1 can tomato soup
1/2 cup water

1. Combine raw meat, rice, salt pepper and onions. Shape into balls.

2. Place meat balls into a greased casserole, pour the mix of soup and water over the meat balls. Bake at 350 for 45 minutes or 1 hour.

Microwave Cheese Filled Manicotti

This recipe was in a microwave cookbook given to me by Ed's sister Bunny. We have had it often.

Meat Sauce:
1 lb. ground beef, crumbled
1/4 cup chopped onion
32 oz. jar spaghetti sauce
3/4 cup water
1/4 cup white wine
2 t. basil
1 t. sugar (optional)

Filling:
15 oz. Ricotta cheese
1/2 t. salt
2 T. Parmesan cheese
2 eggs
1 1/2 cups shredded Mozzarella cheese dash of salt

Pasta
8 oz. manicotti, uncooked

Topping:
2 T. Parmesan cheese
1/2 cup shredded Mozzarella cheese

1. Microwave ground beef and onion in a 2 quart covered casserole for 4-5 minutes on HIGH until no longer pink. Drain.

2. Stir in remaining sauce ingredients.

3. Combine filling ingredients. Stuff the uncooked manicotti using a small spoon or knife.

4. Spray a 8x12 inch glass dish with Pam and arrange manicotti in it. Cover with the meat sauce. Sprinkle on the topping. Shield corners of the dish with foil. Microwave for 30-35 minutes at MEDIUM HEAT (70%).May want to rotate the dish for even cooking. Let stand for 5 minutes. Freezes well before or after cooking. Serves 6-8.

No Bake Cookies

This recipe was make in my family since the 1950's. Out on the farm if my mom saw unexpected company coming she would say, "Quick, girls, mix up some no bakes." They were fun to make for a snack or dessert.

2 cups sugar
1/4 cup butter
1/2 cup milk
6 T. cocoa
1 t. vanilla
3 cups oatmeal
1/2 cup nuts
1 cup coconut (optional)
1. In a 2 quart saucepan mix first four ingredients and boil for 1 minute. Remove from the heat. Add vanilla.

2. In a bowl place the 3 cups oatmeal, nuts and coconut. Add the boiled mixture and stir. Drop by spoonfuls onto wax paper. Chill. Makes 24 cookies.
